Sites - I think pretty much all sites offer same price. Beware of fine print. Most hotels charge resort fee and some charge for Parking and some for wifi. For a particular hotel, In the end the cost will be same no matter the site.

Rental car is not needed for the strip. You can hop on from casino to casino or walk on road or take free tram ride. However you need one for a trip to Hover Dam (engineering marvel they say), Grand Canyon. 

Its a good time to visit Death Valley. Make sure you start early in day so that you finish your visit before night. Drive can be pretty scary and narrow roads. Fill up gas full before you go and fill up in the last gas station. Carry food, water.

Plenty of things to do in Vegas itself. Its been a long while since I went there.

Vegas is good to visit any time of the year.

For finding deals on hotels, flights, and rental cars for your Las Vegas trip, sites like Expedia, Kayak, and Hotwire are your best bets.

A rental car is definitely worth it if you plan to explore beyond Las Vegas. For nearby excursions, consider visiting Hoover Dam or Red Rock Canyon, both within a couple of hours from the city.

I recently stayed at https://www.westgateresorts.com/hotels/missouri/branson/ in Branson, which was great for a family trip and might give you an idea of what to look for in a family-friendly accommodation. Visiting in February can be ideal, as the cooler weather and lower crowds make for a more pleasant experience.
