AI based on neural network is merely mimicking the biology of nervous system to adapt and engineer it to robots. So, no. Humans can do more than what they were made to do, because they can adapt their skillset depending on the need, with no limit literally. About the sensory system, you can always reverse engineer sensory system. What we are lacking in is understanding the biology of sensory system in order to be able to properly mimic it.
