Most local businesses paying rs.1000/day easily. But there is no growth in the job. Of course there is opportunity to learn business and have their own shop business one day. But not many people do this. 

There is better growth in the IT job. However stress is there as well. 

Another factor to consider is the pride in the corporate job vs working at a momo's shop and stature in society.

that momo helper can pay the tax or not on his 3L (it depends on his own morality), he could start his own momo business once he got experience and provide employment for few more helpers ,finally there is no work pressure mental torture like yearly apprisal, upskill, certifications

its a matter of supply and demand, of course companies do what they are designed to do i.e MAKE PROFIT. that's why regulations should be in place, it is never in favor of employees in India.

only govt orgs are bound to ethics and values . 

not taking company side but this is false comparison really. There won't be much growth to the momo helper after 5 years it will be few thousand more only. But software engineer salary will be tripled or quadrapuled easily. Also on paper Software guy works for 8 hours, but momo helper will work probably 12 hours.

A friend started a chicken shop in hyd at the same time I started my career. Maintains quality, delivers to all local restaurants, and sells retail. Made good money and invested in farmlands in Nalgonda. He is worth similar to a lot of people in the US now. Hard work pays off. 

Another friends brother started a Delivery service to US and employs 150+ ppl with turnover in crorer. 

But not every story is successful. You will see a lot of people losing their way, getting addicted to bad things, bad influences, and bad lifestyles and getting involved in local fights, etc. 

Same with IT. Some people with skill, hard work, luck and smart ways go up the ladder and some get stuck taking stress and making OK money. 

We cannot generalize which one is good.

Another thing to take into consideration is one's own personality whether it suits a job or business.

said it like a wise man... id doesn't matter what profession one does. All depends how they are growing in their field and adapting to changes also staying ahead of the curve. Understand the demand and supply.
