Chicken Marination -> Mix Chicken, Turmeric, Salt, Chilli powder, Ginger garlic, lemon and keep it aside for 30 mins. Next add yogurt, Coriander powder, pepper powder, Jeera Powder (half qty of coriander powder), Garam Masala, Chillis cut long, Fried Onions, Pudina and Coriander. Add oil. Marinate for atleast 1.5 hr. Overnight would be great

Soak biryani rice 2-3 hrs before making.

Cooking -> Take a big vessel, Pour oil, use whole garam masalas (cloves, Cinnamon, biryani leaves, Shah jeera, etc). Add onions cut small, once they turn golden brown, add chicken and cook until 80% done. Check taste and adjust masalas, salt. Salt should be a tad little more than what you taste regularly.

Parallelly add rice + water + oil + pudina + whole masalas + salt.

Once rice is cooked 70-80%, drain water, pour rice over chicken in layers. Add fried onion, pudina, coriander, Garam masala (very important), saffron (optional) over rice in every layer.

Let it cook for 15-20 minutes on slow flame. We usually cover the vessel by wrapping with aluminum foil and put the lid.

FYI - Adding garam masala on rice in every layer of rice is the key to get a great biryani

We dont use any complex masalas.

Garam masala powder made from typical garam masala ingrediends -> slow heat on pan and grind.

Coriander powder -> Coriander, some cloves, some cinnamon slow heat on pan and grind.
