Cooking oil?

avoid olive for high and longer cooking (applies to most of indian foods). Italian and few other EU countries use Olive oil a lot for dressing/seasoning. Coconut and Peanut is good for Indian foods

Beef tallow, pork lard are any day better for cooking than GMO SEED OILs like CANOLA, VEGETABLE OIL. I haven't used tallow as I don't eat beef, but I eat pork lard. It's very tasty and healthy too. If you pan fry bacon collect the lard and use it make Egg Bhurji. Only eggs, Onions, green chilli in Pork/Bacon lard. No salt too. You will love the taste.

Peanut oil and Sesame oil. You can also try avocado and olive oil.
