A recipe that I make is my own and everyone loves it. Steps to make

Preparation

1. Cut Chicken breast (or any other meat without bone) into tiny pieces. Think of 1.5 cm X 1.5 cm - Vegetarians can add tofu, paneer, or proceed without any meat.

2. Cut 1 Medium Onion, 1 Large Capsicum, and 1 big Carrot into tiny pieces. Even smaller than Chicken. Almost mashed. All 3 must for good taste

3. Cut Spring onions to the usual size and cilantro into tiny pieces.

4. Crush Garlic (5-6 pieces) and cut into pieces.

5. Cook 2.5 Cups rice. We prefer Jasmine rice. Any other rice is also good. If cooked the previous night and put in the fridge would be even terrific.

6. Buy "Fried Chili in Oil." You can get it in any store. The Walmart link is below.

Fried Chili in Oil

7. 5-6 Eggs.

Cooking Steps

1. Take a big vessel, and add some oil. I prefer sesame oil, but any oil works.

2. After it gets heated, add garlic. Mix well for 1 mins.

3. Add chicken. You can add a little ginger garlic paste to let go of chicken smell. Add very little as we already added garlic. Put the lid on and let it cook until the oil separates and all water evaporates. Typically 5-7 mins. Once cooked, take it out into a bowl.

4. In the same oil, smash 5-6 eggs and saute to make it like scrambled eggs. Once done, take it out into the bowl.

5. Add veggies you cut into tiny pieces. Carrots, Capsicum, and onions. Add enough salt. Put the lid on and cook for a few mins. Medium flame. 5 mins.

6. Once decently cooked add chicken and scrambled eggs.

7. Add 2-3 spoons of Fried Chili Oil or as per your spice levels.

8. Let them all cook for 5 mins.

9. Add rice and mix well. Another 5 mins on high flame. Keep mixing.

10. Add Spring onions and cilantro and 1-1.5 spoons of vinegar. Add salt if needed as per your taste.

Overall it takes about 30-45 mins to make. Tastes amazing.

Porapatuna Drunken noodles try cheyaku. Very bland. None of their noodles are good, but my kids love noodles. Their Basil Chicken is also awesome. Goes well with Fried Rice.
