weekend dosthlu vasthunnaru room ki. chicken biryani oven lo cheyyali anukuntunna.

stove top meedha chesevadini innirojulu. oven lo yeppudu try cheyyaledhu. db lo evaraina chesi unte kastha tips ivvandi..

This is my style for dum biryani
onions ni deepfry chesi , curd tho kalipi mixie lo grind chey .. ( this will add some gravy to chicken) 
ee paste,garammasala,salt,lemon,ginergarlicpaste,kaaram,chicken masala , cumin and corainder powder anni kalipi chicken mariante chesi pakkana pettuko.
stove top meeda water (any amount--no problem )heat chesi bayleaves , cinnamon , cloves and whole garam masala vesi , water boil ayyaka rice vey.. 

Rice 80% udikina tarvata stove meeda nunchi teesey . Marinate chesina chicken ghee raasina aluminum tray lo vesi , rice kooda vesuko ( make sure to drain all water) . Paina corainder leaves and optional food color tho topping chey . tray ni aluminium foil tho cover chey .

oven 425~450 degrees ki preheat chesi , tray ni andulo petti 45 mins to 1 hour pettuko ..

How to make chicken dum biryani Hyderabadi Estyle : My process

 

Ingredients:

Chicken, chilli powder, salt, oil, coriander, mint leaves, stars, sajera, javetri, jeera, cinnamon, black cardamom, yogurt, basmati rice, fried onions, garam masala, ginger and garlic paste, butter or ghee, egg yellow color and biryani leaves.

 

Method :

  1. Damp the basmati rice in water for about 30 min at least before we start cooking biryani.
  2. Wash chicken neatly and drain the water completely
  3. Take chicken into a bowl, and add chilli powder, salt, yogurt, jeera, coriander, mint leaves, garam masala, ginger garlic paste, fried onions, oil. Marinate the chicken and keep it aside for about 30 min at least.
  4. Take a big vessel put it on stove and add oil.
  5. When the oil gets heated add jeera, black cardamom, javetri, starz, biryani leaves, cinnamon. When this is heated and masala starts turning brown add rice, and water.
  6. Add salt to taste to this mixture.
  7. Rice should not be boiled completely, it should only be cooked not more than 60%.
  8. Drain all the water from rice vessel.
  9. Take an aluminum pan, heat the butter in separate cup in micro wave, pour the butter on the inside surface of aluminum pan and spread the butter to the bottom of the pan.
  10. Place the Chicken in the pan as the bottom base.
  11. Spread a layer of fried onions, mint leaves, coriander leaves.
  12. Spread the rice all over the chicken.
  13. Mix heated butter with egg yellow or saffron color and spread it on rice.
  14. Spread a layer of fried onions, mint leaves, and coriander leaves.
  15. Seal the pan tightly with aluminum foil
  16. Put the oven on 500 F and place the pan inside the oven.
  17. Keep the pan inside the oven for at least 1 hour 20 min at 450-500 F.
  18. After the time has arrived take the pan outside and check the rice and chicken whether they are cooked or un cooked.
  19. If uncooked place the pan back into oven and cook it for necessary time.
  20. When done, Enjoy your chicken biryani....

bl@st add green chillis or green chilli paste to the marianted chicken. it ll gives u flavour
