na basic recipe idhea ba 

but i customize a lil 

like rice cook chesea mundhu....oil lo bay leaf, shahi jeera, patta. lavga vesi appudu water posi...water boil chesi  appudu rice cook chestha 

 

and biryani masala fresh ga chestha, marinate atleast 3-4hrs 

24hrs untea inka better

rice enni minutes ki thesthav and stove paina entha sepu cook chesthav 40 mins ah ?

raw meat marinade and rice mixture ni tray lo vesi seal chesi aythey OVEN lo DUM BIRYANI cheyyadam kudaradhu 

meat cook avvadu, adhi aythey rice dry aypoddhi

 

so 

half cook the marinade into a curry, layer in on bottom of try a then add rice 70% cooked on top and include some  moisture like water from boiling into the rice 

the u will get favourable results

 

ayina oven baked biryani only works best for boneless chicken and ground chicken or ground turkey

eni minutes ani kadu.....water bubbling boiling vachea varaku chusi.......i take 3 -4times water, i use really a lot of water, so that the starchiness rinses off in the water and the gets real flaky(just my thought)

just 5-6mins lo...almost cook avuthudhi......i check for the feel when i press the rice almost done avali...kani complete avodhu 

naku aa 70% 90% ento ardham kadu...i go by the feel 

 

 

and i make sure the hundhi is sealed good,,,,,,,based on the veesel i use, i play with flame

like if your vessel has a really thick base.....10mins high flame......25-30mins medium....10mins low...and let it rest for 30mins

thin base iythea 2-3 mins high flame and 3omins med and rest the same 

 

high flame lo ekkuva untea....chicken koncham burn avuthundhi 

 

 

mix n match.....and try different combinations....untill u find a sweet spot

but ikkada main point to take of is.....make sure your chicken is really dry, take as much as water as u can......before you marinate 

i used 350F for 50mins......chicken was really juicy......but base lo koncham water undea.....andhukea above suggestion cheppa 

youtube lo oka video undhi......he cooks both on flame n oven.......video lo vadhu same same vasthadhi ani chepthadhu....emo inko sari try cheyali

usually nenu chicken/goat 70% cook chesi, tray lo vesi 60% cooked rice vesta..taste bagane untundi..but enduko aa dum taste radu.
