Claiming travel insurance/protection for cancelled flight.

They initial itinerary was multi trip HYD - LON - SLC  -- Traveled as per schedule.
 
Return ticket was multi trip too SLC- LON -HYD  - Break journey for a month and half in LON.
 
LON-HYD flight was cancelled and the only option they are providing is refund for SLC-LON_HYD flights. They are not even trying to put them into different flight with flex dates.
 
I bought these tickets for 1800$ per person and the refund they are giving is 620$  . Since it is peak time in june and july ippudu 1400$ around unnayi around same dates.  What can i do now? 
 
I bought them through Chase sapphire preferred and they also have religare insurance. Should i take refund and buy new tickets and then call chase? Did anyone run into same situation? I appreciate your replies.

Sapphire preferred will have its own travel insurance , check if it covers your scenario

Here is link to full text of EU laws/regulation with regards to flight delays/cancellations. In your case article 5 (Cancellation ) ,7 (right to compensation) ,8 (right to reimbursement and rerouting) are applicable. read these paragraphs carefully and determine what Virgin offered you meets the criteria specified. I am not a legal expert but an airline can not simply cancel your entire leg and deny rerouting, they typically ask for fare difference for rerouting if fare class you booked is not available

Subject to availability. Any additional fare cost will be charged. If the new fare is lower the difference will be refunded. (You will be responsible for any hotel accommodation; meals and other transport costs should you choose this option.)

General Conditions
• All re-routings involving other carriers must be notified and authorised by Virgin Atlantic before travel commences.
