Ok, I have some questions... neeku theluso ledo thelidu but I will ask anyway

Rice is a carb kada and they say rice converts into sugars and fats in our body. So does rice fall under this sugar category? what about other carbs like brown bread, oats, etc.... other than oils and protein and vegs.... everything else has carbs in them like rice, pasta, bread, mos fruits... ivanni kooda ee sugar category lo ke vasthaya? Does this mean we should avoid all these and eat only vegetables and meat?

Can someone explain and help me please

Bro, anything you eat converts into Sugars. Unused sugars turns into fat.  Simple sugars like processed carbs (white bread, white rice) get digested fast and increase your blood sugar level in less time. Protein (meat etc), fats (monounsaturated fats like the fats in fish, Omega 3) and complex carbs (whole grain wheat, brown rice) take longer time to digest. Therefore, blood sugar spike is slow compared to simple sugar meal.  Keeping blood sugar level constant is the key here.

Getting used to Sugars and Carbs is just a "habit" like smoking, drinking etc. It is addictive. You need to get rid off that habit. A "routine" to eat healthy will eventually make it your new habit.

Tip: I read it somewhere that any routine you do it for month without a break becomes a habit.

Cigarettes , Sara, whiskey , brandy are not an essential in Indian diet but rice , roti, grains, legumes (which are carbs) are an essential part kada. Its difficult avoiding them .

I think this diet has to be supplemented with vitamin supplements. May be Paleo diet seems more balanced.

Your regular diet doesn't have all the vitamins in it either.
