On a pan—
Heat oil/ghee, 
Sajeera, cardamom, cinnamon, bay leaves, cloves, ginger garlic paste.
Thinly sliced mint, coriander leaves.
Fry these on a pan until rawness is out and oil separates. add this to above marinade. 

for best results marinate the chicken overnight. 

 

 

Soak basmati rice for 2hrs 
in a big bowl 
Boil water with Sajeera, cardamom, cinnamon, bay leaves, cloves and salt; use that pathar ke pool; 

you can remove those dry spices from water before putting rice into it. 
Once water is boiling, put rice in the boiling water cook it to 80%. Then put it to dum. 

 

of multiple attempts in my experience-- what gives that umami taste to biryani is having lots of fried onions and good amount of oil/ghee. I prefer the latter. 

you transfer above contents in to a cooker and do it one whistle too; that's also a dum concept but be mindful of greasing the pan with good amount of oil.

hyderabadi biryani - only sajeera , loung , ilaychi , cinamon - as garam masala . What ever extra  you add corinade powder or jeera powder or star anis oor bay leaf , javitri  or nutmeg is not part of it . its just modified/hybrid to your flavours .

shan masala emo kaani ..baa cheppinattu 

mint coriander and chilli coarse paste chesi vesthe best vasthadhi

Ok, in 8 hours I will start making it will post live pics , give suggestions and help me in making biryani.
