yes bamboo shoots highly perishable items and only available in humid south east asia.

its nothing but heart of palm of young bamboo shoot. so it oxidizes fast and goes bad in days .

baby corn is also the case., we tried growing once for restaurant industry, demand tho coincide avthuu penchaali, kastam nilavunchatam , max 1 week  after harvest
