US potatoes have too much starchy. Soak pealed potatoes in cold water for an hr or two to remove some starch. But entha chesina India lo Aloo fry taste ravu anuko.

The secret to making good potato fry is to fry in high and keep mixing, rather than at low for longer and leaving it. No masalas at all, salt and red pepper powder ante.

Brown potatoes are good for baking. But my husband cooks curry with these as well sometimes because he thinks these are easier to peel when compared to golden potatoes, since golden potatoes are smaller.

You want to make curry or fry. Curry aithe ye potatoes ayithe em undi. Boil them first and cook them in gravy. I find no difference in potatoes taste for Aloo curry.
