Without the heart rate monitor how will you know if you are really in the HIIT zone?

I went to something called Monkey Bar Gym, that is not a crossfit that's what they say but full body functional workouts with emphasis on power, strength and stability.

do some shuttle runs, and add 3-4 of the 100s of HIIT movements that are available ... 

start slow in the beginning... like take more rest time and lower intensity and gradually go for smaller breaks and higher intensity/reps...
