think like this , what tool do you use for daily work , can you build web app using API's skipping the tool and still do the same work. you will learn a lot

those are basic functionalities...

there are some advanced concepts (scripting..etc)...in postman / soapui to configure  all the endpoints...and automate the testing...

I meant forget postman , try to do the same using CURL commands/scripts to the same endpoints, interviewers will appreciate that
