Like Tamilians use ponni rice

Ratio of Idly rice: urad ; boiled rice should be 5:1:2

soak them same like for idly, grind them and mix them well

ferment it overnight

I make 2 kinds of idly

bheeyam ravva idly and madras style idli

For TS

Bheeyam ravva idly - soak 1 cup urad dal and 1 tsp of menthulu for 4 hours and grind it. Soak bheeyam ravva(idly ravva) for 30mins and wash it thoroughly. Squeeze the ravva and add it to urad dal batter, mix well with hand and ferment it overnight.

madras idly - soak 1 cup of urad dal, 4 cups of idly rice separately and add 1 tsp of menthulu. Soak them for 6 hours and grind them separately. Mix them both with hand and ferment overnight.

I keep both the batters overnight in oven with light on.
