madras idly - soak 1 cup of urad dal, 4 cups of idly rice separately and add 1 tsp of menthulu. Soak them for 6 hours and grind them separately. Mix them both with hand and ferment overnight.

I keep both the batters overnight in oven with light on.

1 minapappu ki 1.25 ravva is what I use .  Ravva kuda Nenu nanapedata before night . Morning 8 ki rubbufy and add salt . Evening varaku let it ferment and keep in fridge . Next day make idly soft vastayi.  Nenu water bane posta while grinding batter . That helps with consistency than adding water every time we make idly .
