vampire bro,

i will not advise soda in rice. Quite a few people are now sensitive to soda in rice and will not make a return trip if they feel rice is having soda or meat is refried and used again.

People these days are quite conscious of sugar and BP and oils used, so rice consumption is less (of course if you are talking about students or younger persons coming to eat, its a different thing).

maybe getting a name for quality and have people come back is better than trying to save money on daily food.

Inko option that i saw some time ago,

1. Starting with a lot of promotions, buy one get one biryani free at some late hours or 50% off entire order for first two weeks to get the buzz going and taking feedback from people if the food was good/ toospicy or any improvement needed and taking the whole things to apply.

2. people get served hot dosa or uttapam when coming in for buffet. if they eat too many dosas then actual food is relatively less.

3. Oka indian restuarant they gave free beer for every person buffet, but they couldn't sustain it for long, maybe your friend could try it as a special or for a specific amount of bill or persons.

4. Weekdays lo, one restaurant here had only veg or non veg thali each having veg biryani or non veg biryani with 2 veg and 2 non veg curries. Rasam/sambhar and white rice is common with curd or curd rice, unlimited biryani ofcourse. this helps in cutting of cooking many items on weekdays.

5. As someone pointed out earlier having tie up with local stores to get produce at a cheaper price before they go bad

6. The most money to be had would be parcel service for food. people coming in Morning or afternoon and taking prepacked boxes. if you have an office or set of people coming in this can save lot more money. Catering also goes into this one too. If catering food is liked people coming in will definetley also order for their function from the same place.

7. Your friend can give every order based on price a complimentary free dessert of the day.

All of this depends on competition and people patronizing your friends restaurant ofcourse.

Ratri migilina rice ni next day tomato rice, palak rice, veg rice chesi pettochu, migilina rice  ki perugu kalipi popu petti rendu cashews rendu danimma seeds vesi spoon vesi icharante curd rice ani posh ga tintaru

Whats the nature of your friend - is he decent guy ? law abiding ethical person ?  than tell him not to get into this unless he is chef himself -

you have to be very cunning , unethical , cheat , get slaves from india and abuse them , cut corners avoid taxes and break laws than you will be somewhat successful -
