Flights and hotels - you book online. 

Car & driver - there are many services who will do daily or multiday rates. You pick up car size for comfort. 

I like this approach for couple of reasons - I can have the things I like, I like planning trips, avoid touristy traps, upselling techniques like force you to some stupid shopping areas, etc. 

Main con is planning effort (i know many people hate this). Kaani now a days there is a lot of info to dig up online.
