H1b Stamping help...Dubais vs Carribean islands

Hello..Pls suggest where can I get my H1B renewal done immediately. Do you advise Dubai or Caribbean islands?

Background: Have a business trip in Portugal in May, but my H1B stamping expired. Have to get my renewal done and apply for schengen visa after coming back (with 2 months remaining). I see Dubai's stamping process is around 3-4 days. Does anyone know how's the timelines & slot availability in Caribbean consulates?

Adey problem. To get Schengen visa they want valid US visa to show that we will go back to country of residence after the stay!
