Immigration - straight forward. Just show the visa in Mexico, they will stamp entry. Coming back to US, regular entry.

If you are planning a day trip outside Cancun, all inclusive resort may not be better option. There are hotels almost at the end of hotel zone, may be slightly cheaper

Car - May not be safe. Chichen Itza, Day trips chala vuntayi around 50$. Cancun itself is safe. You need to drive through some of the real Mexico to go to Cancun

2. Doesn't matter. If in hotel zone, you can go to the clubs -that too just one night. Except that, nothing much to see near zone.

3. No car, bus or taxi ... Avoid late night .

If you paid for  all inclusive, don't waste money by going on day trips. You pay lot of money, and pay more money to get out of amenities you paid for.

you can see those bull site seeing later with kids.

1. Book all inclusive with Costco. They will take care of airport to resort and back to airport.

2. If you have valid H1B stamp then no need for Mexico Visa. If you just have I-797 extension with no H1B stamp then you need Mexico Visa to enter Mexico and while coming back to US you will use Automatic Visa Revalidation. Just show I-797 and passport at Port of Entry.

3. Take tours available in resort. There will sales counters in resorts offering day tours/activities.

#3 .... Worst idea IMO .... You pay for all inclusive and then pay top dollar to go out. Even if not al inclusive, I'd not do day trips and high end hotels.
