I have a friend whose cousin put a gol gappa/pani-puri stall outside a popular restaurant in Dublin, CA. He does everything and sells out everyday from 5-8 PM. Looks like he sells $1000/day but the owner only gives him $200 and pockets $800. I was shocked by numbers.
